yummy.




I made this yummy Caprese Panini for dinner last night.  It is super easy to make and very light and fresh.  Perfect for the warm weather we have been having!  I didn't follow a recipe but here is how I made this sandwich...

Start with fresh ingredients:
Tomato
Mozzarella
Basil leaves
Olive oil (I used basil olive oil from The Olive Oil Shop in Charleston...it is wonderful!)
2 slices of your favorite bakery bread (I used sourdough bread for mine)

Directions:
1. Preheat frying pan on stove (or your panini press if you are fancy and have one) on medium heat.
2. Slice mozzarella and tomatoes.  Tear basil leaves into small pieces.
3. Dip both sides of bread slices in olive oil.
4. Layer ingredients on bread (mozzarella, tomatoes, then basil) to make the sandwich.
5. Place on frying pan and heat until both sides of bread are golden and cheese is melted, about 3-5 minutes.
6. Cut sandwich in half and serve immediately.
